Why is part of wound healing to wash it and keep it moist, but steristrips are kept on until they fall off or the time a doctor says to keep them on? doesn't that go against how to heal a wound?

No it does not. Open wounds are to be treated with keeping them clean till they heal. Steri strips are used for linear incisions or wounds to approximate them for healing edge to edge.
