Follow the diet: Insanity comes with its own diet program. I'd stick closely to that.

Hard to be precise: As ideally knowing your height and weight allows for a better understanding of your basal metabolic rate(as in the number of calories you need just to keep up with your daily metabolic needs without account for your activity levels). But as a general estimation, if you are consuming 1800 kcal/day or less, it should get you on your way weight loss wise.
