While in the hospital last november for pneumonia/covid my blood became crumbly during a blood draw. it would pop into the syringe and each crumb didn't appear to have any moisture to it. what would cause this?

Blood does not become "crumbly'. You might have a perception of it when you saw it in the syringe. If there had been anything wrong your doc would have detected and treated it. So relax and dont worry you will be fine.
