The are not!: Low in calories on a weight basis. Complex carbs (starches) are immediately broken down to sugar, in your mouth (amylase), and your intestine ( alpha-glucosidase). The immediately signal the release of insulin, which puts triglycerides into a fat cell, by the enzyme fatty acid synthase.
