Not really grinding: This depends on what they are using to "polish" and why/what they are "polishing". Most likely they are using a very fine sanding disk or a diamond impregnated rubber point to polish off cement/stain etc. Now this is not to say that some tooth structure may/will be removed but it is very minimal. If you are still questioning it just ask more question or don't do it. no worries

Please elaborate: What exactly does your orthodontist propose? Reshaping your teeth? Removing bracket adhesive? Smoothing down rough edges? You'll need to verbalize your concerns with your orthodontist and have them explain what they propose to do any why.
