Could treated strep throat lead to scarlet fever 10 weeks later and is it ok to treat it with same type of amoxicilin to avoid further complications?

No: Scarlet fever is due to a toxin released by the strain of strep pyogenes that is causing your sore throat. If this has been eliminated you should not be getting scarlet fever unless reinfected. Yes you can retreat with same antibiotic if necessary.

Rash timing: There are certain strains of strep a that carry special dna that codes for the toxin that causes the scarlet fever rash. If you are infected by such a strain it will produce a recognixable rash by 12-18 hours after the first fever. In this case, the prior strain did not have the rash code, the second one did.Amoxil (amoxicillin) is fine.
