Can septoplasty and/or turbinate reduction cause "empty nose syndrome"?...or would you have to completely remove the turbinates to cause this?

Perhaps: Not septoplasty. You would have to do extensive turbinate reduction. Also unlikely, but possible. See an ENT doc for advice.
