Insulin: Yes, but in a round about way that is not healthy. Eating too many sugars or carbohydrates causes the pancreas to work overtime. When the pancreas is working overtime it sends out too much Insulin which tells the cells to absorb as much sugar as possible from the blood. The brain feels this and it causes one to be sleepy. But, too much sugar burns out the pancreas and diabetes ensues.

Not carbs for sleep: Foods that are high in tryptophan (an Amino Acid that converts to serotonin & melatonin) will help sleep. This includes bananas (which have carbs plus magnesium & potassium -- important in relaxing tense muscles), warm milk, cheese, & yogurt (which have calcium too.) almonds are good -- high in magnesium. Chamomile tea is very nice. A glass or tart cherry juice can boost melatonin naturally.
