Hemochromatosis: I'm not sure how you got the diagnosis of hemochromatosis without testing. Physicians would suspect the patient of having hemochromatosis based on labs (elevated liver associated tests or iron overload (% saturation > 45%)) or symptoms. Initial test would be iron panel. If this is confirmed of possible iron overload, then genetic testing.

Hemochromatosis: It is hereditary disease and has nothing to do with your operation and age. It starts in child hood and diagnosed in 50's&60'. The tests are hemoglobin, hematocrit, serum iron, tibc, %saturation, ferritin. Gold standard for diagnosis is liver biopsy with dried tissue iron & deposit in tissue. Mri is also used. Later family screen and counseling done. Good luck.
