I have gallstones and have to eat a low fat diet but how much fat is that? any ideas?

Actually lower: The better. But this is only temporizing measure. If you have gallstones, change in diet will not resolve them, but cholecystectomy is definitive cure. With laparoscopy, it is at most an overnight procedure. You should go for it before complications from gallstones ensue if you are having symptoms.
