No, kidney disorder does not come and go as what you describe. I wonder if antidiuretic hormone (ADH) is suppressed when you have anxiety attack although I have not read any literature about this. If you DON'T DRINK a lot of water during the attack but your urine is diluted (low specific gravity) with frequent voiding then ADH suppression is true. Overactive bladder is more common with anxiety.

Anxiety can cause increased frequency of urination but not an increase in volume. Urinary disorders are of several kinds- some temporary and self limiting and some not. It has to be determined if it is actual volume orjust frequency. Increased amount of urine volume requires investigation by nephrologist/ urologist/ endocrinologist
