If it persists or recurs next day or so, buy urine test strips at Walmart and test your urine. If it is positive for blood, you should see your doctor then. In the meantime, eat different foods from the previous days.

It is likely that something you are eating contains a pigment that your body does not break down that is pinkish salmon color. Lok up beeturia for example. Also a small amount of blood from problem in GU system could do the same. I would get a urine test for blood.
