Maximum protection is not "complete" protection: the current vaccines, including Pfizer, are very good, but they reduce the frequency of COVID-19 (with symptoms) by 95%, not 100%. That maximum protection may be reached before two weeks -- for sure it's maximum by then. There is no need for additional time "to be on the safe side".
