After i eat dinner my resting heart rate goes from 60-75 bpm to around 88-110 bpm even while i lay down. this typically lasts for 4-5 hours and wont go back down to 60-70 until right before bed?

Eating tachycardia: When u eat it is necessary to shift blood flow from etc muscles to gut. And may require an increase in heart rate to redirect flow. Go to Wikipedia and read more, then go to uptodate.com. Then keep a diary as some things you eat have stuff in them that may do this as well. Then discuss with your team. I would check BP Aas well. So you have more information. Good learning about how body works.
