High carbs cause: Fatty liver is caused by a diet high in simple carbs (sugars and starches). One can follow a plant-based diet that is low in sugars and starches with good amounts of plant protein without risk of fatty liver, but if you have been eating lots of carbs with little protein that can contribute.
