Eat more: There are plenty of overweight vegans. Bread and potatoes included. Discuss with a nutritionist what foods are highest in calories that you like to eat.

What are "automation" and "adjustment" as keys to weight loss?

Routine change: Automation refers to making things "automatic" in your weight loss routine. This would include "go to" meals that you have established to be within your caloric intake value. It also includes things like scheduling of exercise so that it becomes routine. Adjustment is the process of accepting change. The more routine (automatic) you make exercise and meals the better the chances of success.

Lose weight: Vitamin e has also been shown to help. You do have a risk of gall stones with rapid weight loss. Ironically patients who had some fat when they dieted as opposed to no fat, developed fewer gall stones.

See Dr., then eat...: If one is truly underweight (based on height, family background, and body type), a Dr. can evaluate for a hormonal, digestive, or other disorder. If no medical cause is found, then one can add weight by eating more calories of nutritious foods, while also doing weight-training to increase muscle. Proteins: egg white, nonfat milk, tofu, ... Better fats: olive oil, peanuts, almonds, cashews, ....

See below: Vegetarian diet is fine but it can be full of fat and carbohyderates if you are not careful. I would ask you to use low fat dairy products(milk) and avoid fried foods which are all very unhealthy because of excess of oils and fats used in frying. Exercise and keep your daily calorie count between 1500-1800...Then you cannot gain weight as long as you move around, stay active at >5, 000 steps/day.
