I know ent drs use numbers to grade tonsils but why do they use numbers when they look up your nose? how well does rhinoplasty work for big tonsils?

Not sure: I am not sure what numbers ENT doctors use when looking up the nose. The size of the tonsils is an arbitrary number and differ from doctor to doctor. Cosmetic surgery on your nose (rhinoplasty) will have no effect on the size or function of your palatine tonsils.

Deviation location: Rhinoplasty doctors number the location of abnormalities of the septum, and they may put a percent upon nasal obstruction. Rhinoplasty is surgery of the nose and does nothing for enlarged tonsils.

Rhinoplasty: Your surgeon may like to quantify pathology of anatomic structures. As for your tonsils, your rhinoplasty will have no effect on them.
