Extraction: As long as you are not in a lot of pain-it sounds like it is healing normally. If it starts to increase in pain and you may or may not have metal taste in your mouth you could be developing a dry socket- that hurts- if that happens go back to see your dentist asap it only gets worse-they need to pack some medication in there. Variation of normal?: After 21 days in the absence of pain or other symptoms, healing is pretty well underway. The gray could be a temporary coating or discoloration caused by food or drink. If symptoms persist or develop, by all means return to the treating dentist for an evaluation but it should be returning to normal pretty soon.
