At 8am my acth was 80 (7 - 63 pg/ml), my tsh was 5.6 (0.4 - 4 uiu/ml), my cortisol was 535 (138 - 690 nmol/l) could this be related to my mood swings?

Unlikely but possibl: The TSH is mildly elevated. It should be repeated with a free T4 level to see if it shows hypothyroidism. I'm not sure why they checked your acth and cortisol. You do not look like you have adrenal insufficiency. If they are considering cushings syndrome you need an overnight dex suppression test and/or 24hr urine cortisol.
