Depends: Vegetarians avoid meat and usually fish, but may eat eggs and dairy products. Vegans shun all food of animal origin. Fruitarians are more limited. Some claims for health benefits are credible, many others are clearly false; it's also a powerful protest against the cruelty of factory farming.
