No wheat, no dairy: Some people have problems with the protein in wheat called gluten. Others just need to cut down on their intake of simple carbohydrates. Some people can't digest the sugar called lactose in milk. Others don't tolerate the milk protein. For most people the quantity is what's important. Whole wheat is better than plain white. And milk for people >2 years old should be 1% or skim.
