Another opinion: Sounds like you need another opinion. Assuming an oms extracted your tooth, see an ENT for a different frame of reference.

Palatal pain: Sorry to hear you're still having pain, but it may be due to many factors. How long has it been since your surgery? I would expect some pain for a variable period of time. Was it an upper wisdom tooth? What kind of cyst was it? Sometimes a nerve can be injured during surgery causing persistent pain. There could be a sinus complication as well. Were you in pain before the surgery? Good luck!

Palate pain: You need to find a doctor who can diagnose why you still have pain. You shouldn't expect to live with pain especially if it is so localized.
