if a person were to eat only mashed potatoes and drink only water every day for a month, how would that affect their body?

Will get sick: This is not a good idea. Mashed potatoes do not have all of the nutrients that the human body needs to stay healthy. No diet that limits you to one food or type of food is healthy. If you do this you will get sick and potentially end up hospitallized or worse.
