How does one explain how an 83 year old could have arthritis & partial bone on bone in the knees, bone on bone on hip, stenosis in the back and yet i know a 90 year old that has had nothing replaced?

Genetics and life experience. Your tendency toward various degenerative disorders relies heavily on genes, a lifetime of exercise or not, physical trauma or not, among other factors. Some will live to 100 with all their joints in good shape, others will begin breaking down in their 40's or sooner. The interplay of numerous factors defines the outcome.
