Protein in excess of what your body uses to repair/build tissue is broken down to store as carbohydrates or flushed from your system as waste. You build muscle by doing resistance exercises, hopefully under the guidance of trainers who can teach you proper form and methods.

Certainly it is possible to gain muscle mass and lose fat at the same time. This usually occurs when you are working out well, and you eat fewer calories. This is acceptable within reason, but you have to be careful not to overdo it also. Good luck.
