I've tried many diets in the last 5 years, 1200 cal, dash, keto, fasting etc. now i'm working with a nutritionist and she gave me a 1600 cal diet which i thought was not gonna work because of the amount of cal. but it's the only one working, why?

It is always better to eat the appropriate amount of calories in order to lose weight. It you eat less, your body thinks it is "starving" and then it more effectively stores fat. Also when you eat less calories you tend to be less active and then burn less calores during the day. With those two things happening, you do not lose weight.
