I'm a 60 year old, t1dm female. woke up to having my typically long, skinny fingers ballooned out and looking like bratwurst sauces. this isn't the first time this happened. yet, my esr came back as 6 mm/hr on a range of 0-30 mm/hr. what's up??

It sounds like you have dactylitis. There are many potential causes. One possibility is psoriatic arthritis if you have psoriasis. The ESR is only elevated in 40% of psoriatic arthritis. Fingernail and/or toenail changes would help diagnose this. See your primary care physician first unless you have a peeling or scaling rash. Then see a dermatologist.
