Good question with several different issues contributing to differences. First, there are different tests; some look for nucleic acids from the virus, some look for antigen(virus protein, ie. p24) as well as antibodies, and some just antibodies. Also, people are different. Just as some persons are short and some tall.. processes like time to form AB's may differ. Nature often prefers variation.
