Acanthotytosis is not a common feature of iron deficiency anemia. If you do not have liver disease with or without hypersplenism, you should have thyroid function checked. If the thyroid function is normal, you can try vitamin E supplement then recheck CBC in 3 months. By the way, what was the etiology of your iron deficiency anemia?

All laboratory results need to be interpreted in the clinical context and the doctor who ordered the tests is usually in the best position to do that. Talk to the doctor who ordered the tests. Having said that, if this is the only finding on blood smear, it is not a cause for concern. Wish you good health!
