Sugar level (glycemia) above 60 or below 100 is normal when fasting. Finger stick is done after eating cereal 5-6 hours before is considered fasting level. You do not have diabetes mellitus and not taking any meds so there is nothing to concern. Your body, especially your brain, likely has not gotten used with your low carb diet but it eventually will.

Your blood sugar is not low and is not the cause of your symptoms. Low sugar/low carb diet is not an issue. For healthy diet: http://www.choosemyplate.gov/., exercise 30 minutes/day, drink enough water daily so your urine is mostly colorless, have safe sex, no tobacco alcohol weed or street drugs. Get HPV, Flu and Covid vaccines. Wish you good health!

You may be experiencing reactive hypoglycemia when you eat foods high in sugar content. Your body then secretes insulin dropping your sugar level from high to normal or even lower.which brings on symptoms To avoid this reaction, don't eat foods high in concentrated sugar like cereal, pastries, candy, etc. A 6 hour glucose tolerance test would show this.
