Rare things are considered rare for a reason. They are an unexpected event. The typical GB syndrome would onset within weeks of the infection that triggers the auto-immune response. I would expect it to have occurred by now if it was going to happen. Our lack of long term experience with Covid-19 and its many new strains limits what we can say about eventual outcome.

Fatigue is one common symptom following COVID-19 infection. If you have focal weakness, are unable to balance or to walk normally, please see the Emergency room. Please inquire about a neurologic exam at your physician's office. Watch for headache, fever and the signs above. Rest and monitor temperature and breathing.
