Couple possibilities: It could be related to acid reflux bringing stomach contents back up into your mouth with unexpected minty qualities, like enteric coating on a pill perhaps. It could have to to with a sinus flora of bacteria and bacteria altering your sense of smell since minty is more of a smell than a taste. It could also be cranial nerve damage altering your senses. Get to an ENT doc and possibly a neurologist
