Def of healthy diet: What food is healthy for diabetics? Generally diabetes is a disorder of carbohydrate metabolism. The fewer carbs that diabetics eat equates to lower blood sugars, better blood sugar control and lower risk of developing diabetic complications. Additionally eating less processed foods may lead to weight loss reducing insulin resistance leading to the need for fewer or lower doses of meds.

It matters a lot: If you eat the right foods, you can go off most if not all diabetic meds. It is not a question of carbs but what type of carbs - you want low glycemic index foods (lists available all over the web). You should also cut out all meat from your diet, not eat processed foods except rarely, never drink soda (even diet) or eat fast food, and eat lots of fresh fruits/veggies, whole grains, nuts, & beans.
