It matters a lot: If you eat the right foods, you can go off most if not all diabetic meds. It is not a question of carbs but what type of carbs - you want low glycemic index foods (lists available all over the web). You should also cut out all meat from your diet, not eat processed foods except rarely, never drink soda (even diet) or eat fast food, and eat lots of fresh fruits/veggies, whole grains, nuts, & beans.
