Sensible: Few people willingly count calories, but a visit with a dietician will help. Lean protein (lean meat, whey, whatever is acceptable), as little grease, sugar, and salt as you can, limit carbohydrates as you are able, and especially get used to being a little bit hungry most of the time (it's a good feeling) and distinguishing appetite ("that looks good!") from real hunger. Congrats on your new life.

Low carbohydrate: The best way for you to trim up is limit your carbohydrate and increase your dietary fat consumption. Read "why we get fat" by gary taubes and eatingacademy.Com by peter attia. You won't get skinny overnight, but you didn't gain all your weight overnight. Good luck!

If you are healthy: The best choices would likely be to pretty much stay on track. Perhaps a bit more attention to reducing fats (triglycerides ; cholesterol), salt (blood pressure) and sugar (diabetes). Aim more toward vegetables and fruit and whole grains. Reduce portion sizes from their "hungry man" peak on a slow comfortable slope. Avoid huge pig-outs (all-you-can-eat) or binges of any sort. Moderation's the word.

If u truly R a vegan: with a fasting triglyceride level of 614, then this is a genetically inherited disorder that will require prescription medication to control. It is very important for you to be evaluated and treated for this disorder of Familial Hypertriglyceridemia. All the best. This CAN be well controlled and managed.
