Diet & T1D: This looks like the "macrobiotic" diet. Whole grains and veggies generally constitute good nutrition. It is carb heavy and you may need more insulin. How are you controlling your glu now? Pump? Sensor? Basal/bolus with frequent testing? Suggest getting your glu under control first and have a plan for making adjustments. You may need help from your endocrinologist.
