Hi, my 6 year old son ate some rice at 9:30 pm last nite, he is not diabetic, i checked his fasting blood sugar at 10:30 am as i felt he was lethargic and it was 56.he didnt ate properly the day before, would this cause hypoglycemia?

5 yr old ate at 9:30 some white rice, then biscuits at 10:30 , 12:30 his blood sugar was 130, 2:00 it was 105 , 3 hrs post ,fasting 87 ..non diabetic
3 hours after dinner (chicken and white rice, but not a ton of rice) my blood sugar was 106. Is this normal/ok? I am not diabetic.
In January 2020 (from a lab) my HBA1C was 5.5%, fasting 82mg/dL, 2 hour after breakfast=78.(I am non diabetic) In June 2020 (different lab) HBA1C was 5.0%and blood sugar 2-3 hours of eating rice was 78. Is HBA1C vary in normal range? Please educate?
