Carrots in soup: Babies have been eating cooked carrots forever without suffering ill effects. I have never heard of carrots giving off nitrates when cooked.

Totally safe: I had never heard of nitrates being released from carrots but did some research and learned why you were concerned. This turns out to be a myth. Boiled carrots are completely safe for your baby. However, i would advise using organic carrots when possible.
