Eat enough...: Calories and protein, often enough during the day. That can be a challenge for some on a vegan diet. Have good quality protein at each meal, and snacks.

Doesn't happen: Blood sugar doesn't "drop" no matter what diet you're on or even if you don't eat anything for days. Your body has protective mechanisms to keep that from happening. If you're overweight, a drop in sugar may be perceived as "low" glucose, when it's just dropping, but still normal. Your body responds to the change in sugar, not how low it goes. Normal sugar if you don't have diabetes can be.
