Nothing: The appendix has no known purpose so having it out causes no problems.

Nothing: The appendix is not necessary for normal digestion. It is an extra intestinal appendage that does not contribute significantly to the function of the bowel; and so if it is removed, there is essentially no effect on your body's ability to manage food and stool.
