Yes: Fried foods contain much more fat than non fried but there are some things which can make it even worse such as batter frying, eating the fried skin which is more saturated with fat, frying in lard or other animal fats. Better to stay away from fried foods altogether especially if you're trying to get fit.

Balanced diet: It's not the pan, it's the nutrients. You need protein, carbohydrates, fat, water and calcium in your diet. Pan fried foods can be part of a balanced diet in small quantities or occasionally. Try a nonstick pan and fry in just a film of oil.
