Olive, coconut and..: Olive oil is healthy for cooking at low temperature but is not healthy when exposed to high heat. For higher heat I recommend coconut oil, which has many health benefits and does well at high temperatures. Hi-oleic safflower oil is also good for high temperatures. EVO: I have been using olive oil EVO in my restaurant for 25 years. As long as you keep the oxidation process of heating under control, it is as healthy as any other oil. And it seems that your body is well equipped to deal with it.
