Could allergies take a week to react ?

Not usually: Usually allergic reactions are immediate . Some allergies are "delayed" somtimes for 24-48 hours
for example Poison Oak, Ivy etc (Called "delayed hypersensitivity") Some medications are like the latter (eg Sulfa drugs).
Hope this helps
