A member asked:

Are mung bean noodles a healthy source of carbohydrates?

A doctor has provided 1 answer

Yes for Carbohydrate: They’re different from more traditional egg noodles or pasta because they’re made from mung bean starch. That they contain bean starch is a good clue that they are excellent sources of carbohydrates. The downside to glass noodles is that they’re not rich in nutrients. If you prepare 54 grams of dehydrated noodles, you’ll get about 6 percent of the daily value of iron, selenium and niacin
