I've had a number blood tests over the last year which show that i have a low rbc, but normal-high hgb - what could cause this?

Need actual values: If what you stated is correct, your red cell size may be larger, however, it would be helpful to have all the data, rather the qualitative statements alone. In any case if your hemoglobin is normal, there is no cause for concern.

Recent blood work. Wbc, Rbc, hgb, hct, mcv normal. Low mchc. High Rbw. What does this point to? Had iron def anemia in past.
ER general blood test. WBC ( normal) 10.4, RBC ( normal) 5.15, HGB ( normal) 12.9, HCT ( normal) 41.7, MCV ( normal) 81.0, MCH ( low) 25.0, and MCHC ( low) 30.9. Obese longterm Prilosec user. Do I have anemia? Low b12 risk?
Routine blood work showed Hgb 16.3 HCT 48% RBC 5.48 all other values normal. Healthy other than asthma. Had mild Covid Dec 2021 was fully vaccinated and boosted. Asthma slightly uncontrolled since Covid. Could this be the cause of the high values?
