No: They do not remove your sinuses. Sinuses make your skull lighter and provide a means for drainage and other functions. They may do surgery on your sinuses for chronic infections, or cysts or polyps in addition to other reasons. With any surgery their are risks. Olfactory damage could be altered but the risk is not high.
