Rest of your body: The lead apron protects from "scatter"... Radiation that bounces off your jaws and teeth. Although miniscule in amount, every precaution is taken to reduce non-diagnostic exposure.

X-Rays: Even with todays advancement and fine tuning of our dental radiography equipment, being able to take better pictures at lower exposure, there is still some scatter of radiation that takes place, and since it has a cumulative effect on the body we do not want to expose other parts of the body to radiation that has nothing to do with the area we are exposing. Sort of like sunglasses and a hat.
