Add some fat: It may or may not sound strange to you, but some people like to put peanut butter (or almond butter) in oatmeal. Fat prolongs the stomach's emptying time, slowing digestion of the oatmeal. Adding some extra fiber such as oat bran may help slow absorption also. Animal fat foods such as bacon or sausage, although not a good staple, are ok at times if you''re not vegan.
