I was told that my ultrasound showed a cyst on my thyroid nodule, could that be causing my on & off, but lately, more frequent hoarse/gravely voice?

Unlikely: A thyroid nodule needs to be quite large to compress the recurrent laryngeal nerve to cause vocal cord dysfunction and hoarseness. It is possible , but there is probably some other cause. See an ENT for laryngeal exam with fiberoptic or video stroboscopic exam.
