Olive oil: Cannot withstand high heat so the beneficial compounds in the oil start to degrade and harmful compounds form under these conditions. Olive oil is best used at temperatures less than 400 degrees and raw right on the food. Frying is not healthy regardless of the oil but an oil such as coconut oil might be better for frying since it has a high smoke point.
