The scientific study of blood serum & other bodily fluids. In practice, it usually refers to identifying antibodies in the serum, which are typically formed in response to an infection (against a microorganism), against other foreign proteins (for example, to proteins in a mismatched blood transfusion), or to one's own proteins (in cases of autoimmune disease).
